Celiac disease is not mediated by IgE antibodies and so it is considered a food intolerance by mainstream medicine. Celiac disease results in dysfunction of the immune system, especially of the gut, because of a reaction to gluten, a protein found in many grains. What’s the difference between a food sensitivity, a food intolerance and a food allergy? 

Food allergies Food allergies are less common than food intolerances, and are typically mediated by IgEantibodies and histamine – which can cause itching.
